My beautiful Nonna was named Yolanda, known to most as 'Yole'. As a child, I was blessed to have her visit Australia a couple of times. Later, I stayed with her on three separate trips to Italy. It was always such a joy to experience her amazing cooking and baking. Yole was a strong but sweet lady whom I adored. These wonderful memories have inspired Yole's Biscotti - a strong lemon zest and sweet sugary scent. Made with cocosoy wax.
